This traditional brie dating back to the 8th century comes in large wheels which we ripen here in the cheese room. It has a lovely rich milky taste underlined by sweet and buttery flavors of mushrooms or truffles and almonds. As it ages, it turns from chalky to runny with grassy aromas.
