Chabichou is the most adorable tower of goat cheese that is best enjoyed 5-6 weeks & may develop a blue-green mould on the rind. Sweet & delicate, this cheese leaves a taste that is slightly salty & acidic at the finish. The interior texture is dense yet velvety when young, with a fresh, clean, and mildly-sweet goaty tang. With age it develops a chalky or flinty texture, with more piquant goat-like flavours and nuttiness.
