Notes: The Chaource undergoes a maturation period of at least 3 weeks. At this stage, the cheese gets a white, velvety crust. The pâte is smooth along the crust and even “runs” slightly. The core has a chalk-like structure. The combination of the three creates an amazing mouthfeel. Light notes of hazelnuts and dried fruit, with nice fresh lactic acids.
