Ripened for 24 months in the cellars of fort des rousses. Flavours are very rich and famously complex. It is not unusual to taste butter, chocolate, toast, fudge, hazelnuts, plums, pepper or even leather in the cheese. As the cheese ages, crystals will develop and add a slight crunch to the cheese.
