Notes: Fougerus has a mild, sweet taste, and is slightly less salty than many traditional French bries, making it appealing to the Asian palate. The fern leaf on top serves as decoration, and the perfume of the leaf blends with the mushroomy smell of the white mould. The pate is ivory in colour and soft and supple in texture, and at its peak will reach an almost runny consistency.
