Notes: Saint-Marcellin is a soft creamy cow milk cheese with a runny interior. It weighs about 80 grams. It has a mottled creamy-white exterior (sec), with a nutty, slight fruity complex flavour. The degree of runniness increases with age as the exterior gains blue, then yellow, hues within two to three weeks after production. This cheese is available in three degrees of ripening (affinage) sec, crémeux and bleu.
