Notes: This is a traditionally made farmhouse Gouda with the addition of the Italian truffles spread throughout the curd. The cheeses are matured for about 4 months to obtain the right level of balance between the cheese and the truffle. There is still the salty, chewy taste of the pate, but the earthy taste of the truffles is persistent and takes the whole arc of the flavour to the new heights.
