Country of Origin: Monstalvy, France
Style: Soft
Milk: Cow, Pasteurised
Wine Match: Beaujolais, Burgundy
Notes: Brie de Montsalvy is one of the best-loved French cheeses. Soft and gooey with a delicate, earthy taste. It's a pleasure to eat even on its own. Made with pasteurised milk, this brie comes from Montsalvy in the Cantal department of South-Central France. Brie can be hard to resist but allowing the cheese to mature for a couple of weeks is suggested. Best served at room temperature.
