Notes: This traditional camembert is sourced from south Normandy, is PDO certified and is made with raw milk. Camembert rind is covered with a bloomy white penicillium mould. The pate should be a creamy yellow-straw colour and be suppler under light finger pressure when ripe giving it a rich fruity and creamy flavour. It is not unusual to see red-orange spots on the rind as it matures.
