Notes: Camembert (cam-em-bear) was produced in Normandie, a region famous for its butter and cream as well as its cheeses. This traditional Camembert rind is covered with a bloomy white penicillium mould. The pate should be a creamy yellow-straw colour and be supple under light finger pressure when ripe.
